Sweet Potato Casserole with Crumble Topping
Ingredients:
6 large sweet potatoes
3 oz butter melted
½ cup half and half
2 eggs
¼ cup brown sugar
1 tablespoon pumpkin pie spice (no substitutes, please)
Salt and pepper to taste
Topping:
1 cup yellow cake mix
½ cup rough ground walnuts or pecans
½ tsp cinnamon
¼ graham cracker crumbs
Directions:
Smash up the potatoes in a large mixer bowl. Put everything else in with the mashed sweet potatoes and combine at a low-medium speed with a paddle attachment or regular beaters (not a whip). When combined and relatively smooth (some lumps are ok), put in a (disposable) casserole dish/container/pan.
To make topping, mix all ingredients.
Special Instructions: Please bring the mixed ingredients for the casserole (in a disposable container) and bring the ingredients for the topping. We will bake at the church.
